A popular knife type, these Japanese style knives are handy to have in the kitchen as an all-purpose knife that can chop, slice and dice. They are often considered to be the Japanese version of a utility knife or chef’s knife.

Quite simply, the word santoku means 'three qualities' in Japanese: cutting meat, fish and vegetables, making them an immensely versatile knife type.

A santoku knife can be recognised by a high blade where the spine only tapers towards the tip at the end of the blade, also being a lot lighter than many European knife types and having a blade length of approximately 18cm.


Santoku knives with a fluted blade (sometimes called a granton edge or hollow edge) allow food to easily slip off the blade.
