  • Using a sharp knife
  • Start by removing the legs
  • Separate the leg from the breast
  • Carve until the knife hits the thigh joint and then pull to separate
  • Repeat for the other leg
  • Locate the Keel bone down the centre of the chicken and carve down one side
  • Lifting an pulling with the carving knife is important
  • Repeat down the other side of the keel bone to remove the other breast
  • Try to remove as much of the breast meat as possible
  • What is left can be used for chicken stock or removed with fingers
  • Next remove the wings
  • Carve around the wing joint in order to separate
  • To separate the thigh from the drumstick
  • Carve at an angle so you can cut in around the thigh joint
