From stars to steel
Clare Smyth MBE is the first British female chef to run a restaurant with three Michelin stars.
Her journey with food began on a farm in Country Antrim in Northern Ireland, where she grew up. Since moving to England at the age of 16, she has trained and worked in some of the most celebrated kitchens in the world.
She launched her restaurant Core by Clare Smyth in London in 2017 and Oncore in Sydney in 2021. Core received the prestigious three Michelin star rating just three years after its opening.
Clare’s dedication to precision and excellence is reflected in the Cutler & Smyth range, which was born after months of research, honing designs, and testing proto-types.
Clare is passionate about empowering people to cook and believes that the right knives can ignite a spark in every home chef.
Haute craftsmanship
Every Cutler & Smyth knife comes to life at our workshop in the West Country.
Blades start as strips of SF100 stainless steel, which are laser-cut into individual blanks.
These are batch-hardened to 1080°C for optimal strength, then cooled and tempered. Using CNC technology, we then precisiongrind the blades to exact specifications before finishing each one by hand.
Our handles are crafted using bespoke tooling on a CNC router to create components from Richlite’s Black Diamond. Each element is then assembled with brass custom-made rivets and a mosaic centre pin, shaped, and polished by our cutlers.
Finally, every knife undergoes the ultimate test — hand sharpening to razor-like precision.
This painstaking process combining tradition with technology results in knives that are not just tools, but beautiful design pieces in their own right.
Caring for your knife
Your Cutler & Smyth knife is guaranteed for a lifetime with proper care. To keep it in excellent condition, please follow the instructions below:
DON’T PUT YOUR KNIFE IN THE DISHWASHER
This is the most important rule. The salty detergent and high temperatures can damage your knife, and putting it through the dishwasher will automatically void the guarantee. While we can repair knives damaged this way, there will be a charge.
HANDLE CARE
To maintain your Richlite knife handle, avoid using bleach products or abrasive cleaners. Use mild soap, warm water, and the soft side of a sponge for cleaning.
HONING VS. SHARPENING
Regularly honing your knife is essential to maintain its edge. Honing should be done slowly and methodically at 15 degrees. Sharpening should only be needed once a year and is best done with a whetstone. There are many online tutorials available that show proper sharpening techniques.
Please handle your knife with care. Damage from negligence may not be covered unless it results from a manufacturing defect.
