How to Carve a Chicken

- Start by removing the legs
- Separate the leg from the breast
- Carve until the knife hits the thigh joint and then pull to separate
- Repeat for the other leg
- Locate the Keel bone down the centre of the chicken and carve down one side
- Lifting an pulling with the carving knife is important
- Repeat down the other side of the keel bone to remove the other breast
- Try to remove as much of the breast meat as possible
- What is left can be used for chicken stock or removed with fingers
- Next remove the wings
- Carve around the wing joint in order to separate
- To separate the thigh from the drumstick
- Carve at an angle so you can cut in around the thigh joint
