How to Chop a Leek

- Thoroughly wash with cold running water
- Remove root end of leek
- Remove leaf end (keep for stocks and soups)
- Leaving the main stem of the leek
- Cut in half down the length
- Lay both lengths flat side down on the board
- Make a bridged crab with the hand keeping the fingertips tucked away .
- Keeping the knife up against the fingers slice the leek with a gentle rocking motion
- Move the fingers back after each motion
- Chiffonade (Shredding)
- For cutting leek into strips slice only as far as the core
- Open out the leek removing the hard cente
- Place flat on the chopping board
- Using the gentle rocking motion of the knife
- Slice thin match stick slices approx. 4mm Julienne
- With the slices turn and repeat cutting motion cut to produce fine dice (Bruniose)
